Cooking Club Halibut Au Gratin
HALIBUT AU GRATIN
1-1 1/2 lbs. halibut
3/4 gal boiling water
Seasoning. Old bay, Bay leafs, Lemon, Chef Paul's Blacken Seasoning.
In a Medium pot bring 3/4 gal water 2 TLbs Old Bay, 1 Tlbs Chef Paul's Blacken seasoning 1 whole lemon cut up, 3 Bay leafs. Bring to a boil. (2 tsp salt. turn off the heat.
Place halibut pieces in hot water Cover and Pouch until fish flakes easily (5 minutes). .
Remove fish from water and bones if any. Break into large chunks. Meanwhile, make white sauce (thick). Pour into 2-quart casserole dish and layer with fish chunks over sauce, then cheddar cheese. Cover with remaining sauce. . Bake at 350 degrees for 30 minutes. DO NOT OVERBAKE. Fish will be dry and tough. Serves 6.
WHITE SAUCE: or Cheese Sauce
6 tbsp. butter
6 tbsp. flour
1/2 tsp. salt
1/8 tsp. white pepper
2 1/2 c. milk
3 cups Cheese White, sharp cheddar, or Pepper Jack jalapeño'
Melt butter in saucepan. Add flour, salt and pepper; stir over medium heat until mixture foams. Add milk; stir occasionally until sauce is thick and
Topping: 2 pkg Ritz crackers crushed and placed in bowl. Melt one1/2 stick of butter and mix with crushed Ritz crackere 3 Tlbs of Poppy Seeds and place on top and bake.
